Mid-Sept Alps for challenging hiking and boutique feel + great pool or lake

Mid-30s couple, looking for 4 or 5 nights in the Alps general area in mid-September, first time in the region. Budgeting up to $25k for lodging. We've spent most of our adult lives in a Rockies mountain town so we want access to real hiking terrain but this is also our few days away from the kids so we're equally optimizing for peace and quiet / relaxation time.

We are considering Rosewood Schloss Fuschl and Park Hotel Vitznau but also looking at:

Forestis - Love the setting but concern is around fine dining emphasis and lack of other options.

Aman Rosa Alpina - Reviews seem not up to Aman standard yet.

Schloss Elmau - worried it's too big to feel boutique.

Mandarin Oriental Como - Hiking seems more rolling / moderate

Do any of these balance our criteria the best? Or a sleeper I'm missing?
