Rule #5 - Masashi Yamamoto 240 Gyuto #Shirogami #2, Iron clad.
My first “proper” Gyuto and my first 240.
I’ve been wanting to try a more reactive steel and was keen to get hold of a Masashi after watching the videos on him from Knifewear.
His knives seem hard to get hold of in the UK, but I was able to purchase from Cleancut and have delivered to my mother in-law in France which saved on the extra duties. Bonus!
Went through some test paper cuts effortlessly and looking forward to building that Patina.
