The Shanxi Museum in Taiyuan is jaw dropping when you see how old the earliest exhibits are. Nearby Jinci (晋祠) reminds me of Kyoto but is perhaps more stunning. Pingyao (平遥) is the best/most well preserved ancient town I've visited in China hands down. As for cuisine, the local knife cut noodles are hearty and delicious. Guo you rou (过油肉) had me pleasantly surprised. They use vinegar a lot in their cuisine - I even bought vinegar flavoured Cola at Pingyao. My only regret was not visiting Mount Wutai (五台山).
