What are your thoughts on changing the races mechanics?

I am currently world building with a lot of influence from mythology including things like Viking dwarves and ancient Egyptian elves. To fit this idea I'd want to make changes to the player character races to fit, such as cold resistance for dwarves and fire resistance for elves, and potentially having no tieflings and Aasimars, but im worried this would turn away players so I ask.

If someone made large mechanical changes to the player races, including removing some options, to better fit a Homebrew world, what would be your reaction?

I just finished Odyssey for the first time. AMA

Title basically says it all. I just finished AC odyssey including DLC and the crossover and I thought it'd be fun to do one of these. I've been playing through all the games so im onto Valhalla after a break.
