Lunch Bowl
Here’s my lunch today:
- 3/4 cup Farro
- 1/2 sweet potato
- 1/2 cup black beans
- A scoop of “hash” of 1lb sliced baby Bella mushrooms, 1 chopped yellow onion, 1 chopped yellow bell pepper, 1 chopped orange bell pepper, and a handful of spinach.
I’ll add more spinach next time but have been on a green smoothie kick. I’ll also add some diced garlic or jalapeño, but it hit the spot!
