Upgrading Temu Dirt E-bike with a new lithium-ion battery and a more powerful motor, how much can I push it?

So I decided to upgrade our mini e-bike that we bought from Temu a while back. It's a 500W motor and surprisingly well put together. I want to see if I can upgrade it with a 750w, 800w, or 1000W and I wanted to get your expertese on what is the best route and what is achievable. I do not want to upgrade everything, I want to keep the controller and just get a new motor to may be increase the power by 20-30% now that we have a new battery. I want to keep the bike legal so I believe 750w is my max but would 800w really be that cotentious if my son or me get stopped?

I have so far dissassembled it ( it is very tricky to dissassemble, unlike the Razor ) and have rewired things to support the new lithium ion battery. I had to replace and splice some wires on the controller to change the plug.

I have attached a bunch of photos of the motor, the new battery ( which fits like a glove for this bike ), etc..
