Trouble recreating recipes at home

So I watched this video and followed everything to the tee and the result was *fine* but not like he was able to make it. What do you think could have gone wrong? Not enough ghee? Also my kashmiri chili pepper seems like it's hot and doesn't add that much color (I don't mind the heat but I cook for others). Has anyone else noticed that variation? Most cooks make a point to note that it's not hot but it's there for color and I don't get that same impression.

Biryani video

Hi, so I did search this site and all the recipes were old and the links I clicked on were broken. Is there a great biryani video you have seen and tried in the last year or so? I would like to do a project cook this weekend. Preferably chicken because my gf hates lamb (it sucks, I know).

Hi so last year I ordered some ghost and scorpion pepper seeds and started them indoors and they didn't really start producing until late in the season. I tried to overwinter some of them and am afraid that they are all dead and not just dormant. I should have started a new batch in like February but I didn't. Does anyone also enjoy growing these kinds of peppers and have seedlings they would be willing to sell me? I would be grateful. I've seen Carolina Reapers at Estabrook's but I'd like something more interesting and will probably end up with those if I can't do better.

Ok so I 100% promise you I am not trying to stir the pot. I am a second gen Indian immigrant who grew up in Nebraska and subsequently went to white dominated schools and worked in white dominated professions and have known very few black people and the ones I did know either grew up in very white areas or are children of immigrants from Africa. So I am aware of cultural stereotypes stated by black people about white people "they don't season their food, they don't handle spice" but, like, I grew up eating Indian food and it's way more seasoned and spicy than anything I can think of as being the cuisine of any "American" group of people (I put American in quotes because I was born here and am American and this isn't meant to be some political post.). So again, what are these heavily spiced and spicy foods that people refer to when they are talking about food black people eat? I'm genuinely curious.
