Sometimes I say I'm a contest cook in recovery, it's been 7 years since my last KCBS contest. Did well before that, but contest cooking is kind of exhausting. Lately I don't fire up the WSM, been cooking indirect in a kettle, pretty lazy and I am loving the results. Here's two racks, seasoned with EAT BBQ rubs, cooked indirect, sauced with Kinder's Hickory Brown Sugar. Switched'em around about 90 minutes in, they were cooking fast with an active fire. Grandson was impressed! They were competition tender, I could have done a turn-in box!
