eSIM for travel to Canada and US for ~6 months

What advice do you have for carriers so I can have phone and data while travelling in Canada and the USA?

I'm Australian currently with Optus, and with international roaming on I can receive SMS for free, but rates for data are very expensive. I'll still need to receive SMS for 2FA for bank payments etc

I'll be in Canada June-July, and USA August-October

I looked into carriers like Lucky mobile, Freedom Mobile, and Public mobile in Canada, and it looks like I could stay on those while in the US with Roaming? Would I still have all the data/calls etc? anything I'm missing? Not sure if I should purchase a plan now before leaving Aus, or wait until I get into Canada to sort something out

Also with my Samsung S24 is there a way to have Optus roaming on to receive SMS, but use the eSIM for data? or is it a case of switching Optus roaming on just when I need to receive a 2FA?
