Help me create the “best” cutsheet
This weekend I have the opportunity to join my local butcher to observe and participate in breaking down a half cow I’m bringing him. What is your ultimate cutsheet that maximizes the number of unique burcher’s cuts? I enjoy everything from teres major to banana heel, but would love some advice/opinions on how you all would do it.
