For my birthday earlier this year I received a pizza oven attachment for my 22" Weber Kettle. I usually just pour my hot coals into the middle for it and spread them out relatively evenly but I am running into an issue where sometimes the stone gets way too hot and I cook the bottom of the pizza way before the top. The issue seems to be clearly that the stone is getting way too hot, but I fear that a baffle will keep the temperature too low to actually cook the pizza properly. Does anyone have any tips or tools they use to get the pizza oven in the sweet spot?
