Finally found 6-8oz ish rocks glasses thrifting. Celebrated by making a penicillin for myself and a gold rush for the wife. No more stupid 12oz rocks glass.
Penicillin
2oz blended scotch whiskey (I used this locally distilled single malt instead with a similar profile.)
3/4 oz ginger syrup
3/4oz honey syrup
1/2 a lemon squeezed.
Shake with ice.
Pour over large rock and float with preferred amount of islay whiskey. Garnish with expressed lemon.
Gold Rush
2oz Bourbon (I used Green Rivers new Honey Finished 10/10 choice)
3/4oz honey syrup
1/2 lemon squeezed
Egg White (not usually called for but this is basically a sour and improved the texture incredibly well)
Shake Dry then Shake wet and strain over rock.
Garnish with Expressed lemon peel.
