The more I eat regularly the worse I feel?

In the process of getting diagnosed with ME. Likely moderate ( all of my specialties agree that I have it but I’ve been waiting a year to see neuro and won’t see them until December to get an official diagnosis). I’ve had issues with food for about a decade now. I’ve struggle with intermittent delayed emptying, issues with inappropriate production of biles and acids. I understand from research that some people experience a post food crash but from what I read it was more along the lines of a few hours post food. Does anyone deal with feeling like they’re in a food coma for 2-3 days after a day of “normal” eating. I don’t have an appetite or any hunger cues so I tend to under eat. Maybe one meal and a snack a day. My PT thinks it contributes to my lack of energy but any time I try eating more I get so fatigued the following days that I struggle with moving independently, getting up is impossible on my own. I’ve tried breaking it up so that I’m basically snacking all day but that doesn’t help the ( basically) PEM I get from eating over 800 calories. Any advice welcome
