Dabbling - What is allowed? Sincerely, a newcomer

Hi all, I have a mega sweet tooth and cravings. Over all I eat pretty healthy but I’ve conditioned for years that after every (even healthy) meal, i NEED something sweet to feel satisfied. I’m dabbling with cutting carbs and refined sugars, but have questions about what is allowed vs. not to be effective? I.e. is eating fruit okay? Dark chocolate? Milk? Things that have sugar in them, but no ADDED sugar. Same with carbs - is opting for lower carb/less processed/no refined or added sugar enough? Can you eat bread or sweet potatoes if it’s paired with high fiber&protein meals? Or do you need to go all in? Thanks for the guidance!
