Need Help with Home Server (Veeam)- I'm a complete networking Noob

Soo long story short, kinda, lol.... Years ago just before Covid, I met this local guy online and we sold each other a bunch of electronics and PC related items and ended up becoming pretty good friends with him until recently. I sold him a bunch of GPU's and Server Mining Chassis and he sold me a little supermicro 8 bay home server. He set it up for me after he sold it for me years ago, running Veeam but never showed me how to use access, use, etc... the veeam backups and of course I never needed to use them until now, when I don't want to be friends with this dude anymore moving forward.

I have full connection to the server directly (Monitor, KB&M) and via windows RDP on my main PC that it is backing up data from, I can get into Veeam on the server itself but idk where or how to begin doing anything with these backs ups. Me and this dude had a falling out and I really don't have any interest in being his friend anymore for various reason not necessary for this post so its time I learn how to do this myself aka via the internets help lol.

I want to preface that I am not married to Veeam or even the backups on the server. I still have all the files I need local on my PC and I can and will be backing them up to a separate drive temporarily but my problem is, I am building a new PC and it wont be able to connect to the server anymore based off how it was setup.

***Current setup***
Because internet via ethernet in my current living situation isn't an option, ethernet running between the server and my PC directly is only for them to communicate and run backups. I believe he setup some sort of static IP port forwarding on my PC ethernet port so it can talk to the server? Again idk, I am a MORON when it comes to this stuff. The server connects to internet via extremely slow MOCA ethernet but thats NBD cause it only needs it for updates and my PC connects to internet via Wifi.

***New Setup***
Brand new PC. 9950X3D2, Gigabyte X870I, 96GB DDR5 RAM, 5090 Astral with (3) local drives, (2) 4TB Nvme's and (1) 4TB Samsung 2.5" SSD. I will sadly have the same internet connection limitations until I move, hopefully within the next year or so, so server and PC will need to talk in the same manner but my new board at least have a 2.5G ethernet jack so hopefully that will allow for faster backups to the server?

Can anyone help me figure out or point me towards resources that will help me figure out how to either:

a) Reconnect my new PC to the server to in the same manner as its currently set up and how to use and utilize my data backed up via Veeam?

b) Ditch Veeam and the old data and set everything up fresh for my new set up.

c) Another alternative I am not thinking of for setting up my server and PC that you can suggest and makes sense given my limitations.

While I mentioned before that I am a MORON with networking and backups, I should clarify that I'm not totally incompetent lmao. I've been building my own PCs my entire life and I am mechanical engineer by trade so I am capable and more than willing to learn so any help this sub could provide would be greatly appreciated!

As someone who is disabled from being hit by a car a little over a year ago, taking on this task feels good and refreshing since I haven't been doing much for the past year. So I actually am really looking forward to learning something new because of all of this.
