Need advice uploading 2nd shooter photos with mine to Lightroom

Two issues (coloring and chronological import) when uploading to Lightroom:

Coloring- I am wanting to import flat for both cameras so my initial photos all look similar. Currently our Nikon photos look flat but Sony are super vibrant and it drives me crazy when editing. How are you all getting two separate camera brands to upload in flat so edits are seamless across the board? I removed global coloring in Lightroom for specific camera brands and it still didn't work.

Chronological import - We sync the time down to the second on both cameras prior to shooting but when uploading to Lightroom the images upload super off (example: When sorted by capture time, Nikon photos show the bride getting her makeup done mixed in with the Sony photos already featuring the ceremony). We are having to edit meta data everytime so photos mix in as they were taken in real life.

Is editing meta data and dealing with separate color profiles just what everyone deals with as a standard practice? Or am I missing something?
I am typically a pro celebrity photographer. I've shot solo for 20 years so weddings aren't my specialty.

Seeking wisdom here so no judgement please, just advice on what the standard practice is to streamline this process. Will eventually move to using two of the exact same camera if I continue doing weddings, currently just have a few booked. Thank you in advance!
