I’m looking for some interactive career advice. What career should explore?

I need to go back to school and/or get a career type job and would like some help determining a good fit. So I would like to get suggestions from people who don’t mind me giving “excuses”. I would like to find the best fit and can’t do that if someone gives me two suggestions and is offended they don’t quite fit.
About me and my situation: I have been a stay at home mom to 5 mildly disabled children ages 4-13. My husband is becoming increasingly disabled due to the same disorder the kids inherited. It’s reasonable to assume he may be unable to work entirely in the next 5-7 years. He struggles to work full time now, but I do have time to go to school before I need to take over. I did great academically in grade school and high school, but B averaged in college due to my at the time undiagnosed ADHD. I got my associates in general education, but no further education. I am reasonably intelligent. I scored a 93 on my ASVAB, for reference. I do not manage my own time very well so any type of self-employment would need some very built in structure. Our family needs 50k base, and either flexibility for me to manage the kids or an extra 25k to hire help (dad can keep them alive, but cannot manage school runs and the work part of being stay at home without significant support.)
I love the sciences, particularly biology. My dream job would be a marine biologist but there is significant reason for me to stay in Arizona USA. I am also fairly artistic and creative. I have previously worked for the us forest service, in a call center, and as a nursing assistant in a nursing home.
