Coming from a Royal Enfield, need advice

I owned and rode a Royal Enfield Himalayan for 2 years and it's the only bike I've spent any real time riding. I sold it a few years ago and haven't been riding since. It's time for me to get a new bike and I really don't want another Himalayan, I thought it was heavy and way too slow.

Realistically I'm going to spend 80% of my time on paved rural roads. I want something that can cruise at 60 or even better 70mph without struggling much. I'd love to keep the price under 3k, the cheaper the better. I don't mind getting an older bike and I'm not afraid of doing repairs. Any suggestions? Does something like a Super Sherpa or a DR-Z fit the bill?
