My go-to healthy dish when meal planning fails
Air fryer chicken thighs, sautéed onion, tomatoes, chickpeas, and spinach, some plain white rice, and plain Greek yogurt. My wife and I try to eat pretty healthy, and sometimes ingredients have gone bad/I forgot to get certain components of a recipe/leftover reserves are getting dangerously low. What I always have on hand are
- chicken thighs and spinach in the freezer
- canned chickpeas in the pantry
- onion, tomatoes, and garlic on the counter
Highly recommend. Did a quick lemon and garlic marinade here, will probably try a sweeter sauce/marinade next time to balance the tartness of the Greek yogurt better.
