Moisture trapped under slab after interior flood, not properly dried- ins denies

Home flooded from cracked toilet supply plastic fitting while away. Entire home flooded, water coming out doors. Cracks exist in slab. Ins covered it, drying Co did it all but then after a year+ mold was found under flooring moisture barrier in entire home. Moisture meters show slab still saturated nearly everywhere. AI finds "false dry" phenom. common, from fast drying. Moisture just seeps back. Ins co hired engineer that says stucco leak outside is source, and was present before flood. This is BS. In fact it is dry around perimeter and this stucco is 10 ft away from main living area outside lanai. THere are no pipes in slab. Only explanation is retained water. Codes say vapor barrier should be used under slab. Moisture drained around outside it appears, off edge of vapor barrier. BUt is still trapped, pooled under slab interior. After my own drying for a year, central area has dried but rooms on each end still pooled water. Seems this would be common after hurricanes in FL. My home is near Tampa, in Sun CIty Center, but did not flood. IT cannot flood anyway, there is a lake behind, water level several ft below slab. I reported all this, and had another co verify moisture, but Ins and their engineer still say came from stucco leaks. Need another "Forensics ENgineer" that is not an Ins Co whore. Anyone have this issue? Heading towards mediation but want good expert.
