London and Scotland Itinerary Help

I’m heading to one of the NFL games at Wembley this October. Usually, I just stay in London for a few extra days, but this time I have extra time and am wanting to get out of London, and am interested in possibly getting up to Scotland. I’d love some of your recommendations and help, and of course your sarcastic comments too ;)
My flight arrives on a Thursday morning and returns the following Thursday morning. Because the NFL game is on Sunday, I don’t know if I should plan my London stay for when I arrive, or immediately get out of London and then come back on Sunday. OR I’m also open to skipping London and just coming in for the day of the game and spending the first few days somewhere else in the UK.
I’m thinking Scotland for half the trip simply because of some more picturesque settings. I also intended to ride the Jacobite (Hogwarts Express) but it appears that basically the entire season is sold out of tickets. I like the idea of renting a car so I don’t have to lug my bag around on public transport and it opens me up to travel a bit more. With that in mind, is Scotland a good idea even with the weather in October? Or should I consider Ireland instead?
