How do you deal with quack grass in your garden beds?

I am pretty new to gardening so please pardon this question if it's basic! The house I moved to has garden beds that are a bit over run with quack grass. Some perennials literally have quack grass growing out of them. How would you deal with this?

I'm considering watering, removing as much of the rhizomes as possible, including digging up the perennials and sifting through the roots. Then replanting, and applying mulch. Is that overboard? Should I accept that quack grass will always be there and take a less involved approach?

I've been reading up on lawn alternatives and am thinking of replacing a small patch of my backyard with yarrow. Looking for your personal experiences (source of seeds, how you did it, if you mixed it with any other seeds, and how you're liking it, etc).
