Apple and Cinnamon in secondary

About to finish up fermentation with this recipe and was curious about flavoring:

1 gal apple juice
3 lb honey
3.76 g Ec-1118 yeast
~7 g fermaid O

Starting gravity: 1.12

Want to have a cinnamon apple flavor but I’m not sure how much of the apple flavor will make it through fermentation and how it will age? Not against adding apples in secondary if that will help.

Also I plan to add 1 cinnamon stick but not sure how long to leave it in.
