What to do about this sink

We just moved into this house, had to get the 2nd floor flooring replaced due to previous owners damaging them. We went to floor and decor had someone help us pick out new flooring. It was going to be for about 500 square feet, a living room, kitchen, and half bath. She was wonderful, showed us multiple options, explained everything in detail. We picked out LVP and tile for the bathroom. We went through the company they had brochures for to get them installed. Guy who actually did the work did a great job. We talked with the boss first however. He talked us out of doing tile in the half bath because it was going to be more complicated, the pedestal sink was going to have to be altered by a plumber because the tiles were going to be thicker than if we did LVP flooring. Well turns out it didn't matter either way because the bottom part of the pedestal sink doesn't fit under the sink anymore. So now we don't know what to do. Should we hire someone to cut the bottom part of the sink down, just place a cabinet they make for pedestal sinks under or replace the sink entirely?
