Rum for cocktails/tiki with long covid

Due to some immeasurable bad luck, i've tested covid-positive 5 times since the outbreak; I now suffer from long covid symptoms that seemingly only effect my ability to taste certain flavours. This mostly changes sweet foods, and in particular, chocolate, which is almost entirely flavourless to me. I can taste the sweetness and complexities of the sugar used, but none of the chocolate characters. If anybody else has experience with long covid rum adventuring, which rums would be best to use for tiki and other rum cocktails? Appleton 8y has been my most successful pick, and a whiskey smash with Buffalo Trail is my favourite drink of all time (unchanged after long covid). I've since tried, in a variety of cocktails, Goslings (very bland and one note), Plantation OFTD (much the same as Goslings), Flor De Cana 5-year (mostly fine, balanced and round but still a bit boring), and Diplimatico de Familia (quite good, on par with Appleton 8y).
