AC not keeping up

Need some advice: I have my thermostat set to 71 degrees. It seems my AC is struggling to keep up with the heat outside and with any heat from cooking. After using the oven or stove for a few minutes the thermostat reads anywhere from 75-80 degrees. It ends up taking several hours to come back to 71.

For reference my apartment is 1000 sqft with all south facing windows so we get a lot of sunlight. Ive been keeping all the blinds closed to try and combat that.

Cold air comes out of the vents. I’m assuming it might be a problem with bad insulation?
