Sage/Breville Duo Temp Pro - Bitter Coffee

Hi all, hoping someone can help me diagnose this.

Setup:
• Sage Duo Temp Pro (bought second hand, barely used)
• Fellow Opus grinder
• 18g in, single wall basket
• Proper puck prep with WDT tool and distribution tool, plus tamp

The problem:
Undrinkable bitter coffee no matter what grind size or yield I try. No crema either. I am using beans roasted specifically for espresso, within the right roast date window.

What I’ve already ruled out:
• Deep cleaned the shower screen and basket and descaled with the official Sage cleaning tablet
• Steam wand generates pressure with no issues
• Portafilter locks in properly
• Tried doses between 16g and 18g with no improvement
• The only window where flow looks somewhat correct is grind 4.7-5 on the Fellow Opus, which is surprising because the same beans on the same grinder at work on a Sage Bambino Plus pulls great shots consistently at grind 1-2.

That grind discrepancy between the two machines is really throwing me.

Anyone experienced this or have any advice before I take it in for a service?
