Pizza Dough Disaster

I tried to make my own pizza dough using Preppy Kitchen's recipe -https://preppykitchen.com/spring-pizzas/#recipe

I followed the recipe to a T, I measure everything using a food scale, using the correct speeds on the Kitchenaid, no ingredient swaps, etc

HOWEVER, it was a sticky mess. The first time I did it I kept adding flour until it was just tacky (although part of the dough still stuck to my fingers). This ended making the crust dense and honestly just not good.

Second time I did some research and heard that if you work the dough for a while, let it rest for 15 min, and the dough would be easier to work with. I did that in the Kitchenaid and then tried doing the same using my hands to knead the dough. I did stretch and folds, slapped it on the counter, and no matter what I did it continued to be sticky. Never passed the window pane test. I eventually gave in and added a little flour after letting it rest and it helped a bit, but it was starting to get to the part where I was repeating the same mistake as last time. After an hour of resting and kneading, I just gave up because I wasn't seeing any improvement.

All the comments on the video and the recipe post are saying how easy and wonderful it is. I've never had an issue with any of his other recipes so I know I'm the issue somehow. I'm really new to bread doughs so any tips or insights on where I can improve is greatly appreciated!
