DIY Basement Apartment Kitchen Build

Looking for some opinions on a basement apartment kitchen I’m building.

I’ve done most of the work myself so far—framing, electrical, plumbing, drywall (until I realized I sucked at it an hired it out), etc. The cabinets are assembled and ready to install, and the countertops will eventually be professionally templated and installed.

Right now I’m trying to figure out what to do with the concrete stem wall/lip running alongside the kitchen. I’d like to create a small L-shaped extension at the end of the counter to gain some extra prep space and maybe a spot for a stool or small dining nook, but I’m not sure of the best approach.

Would you frame over the concrete, build on top of it, leave it exposed, or do something else entirely?

Also open to any general suggestions for making a tight galley-style kitchen more functional before I start installing cabinets.
