Beautiful loaves

My process:
For 2 loaves
650g water
900g KA bread flour
100g ww flour
200g starter
20g salt

Mix water, starter, flour. 30 min later add salt. Wait 1 hour. 4 coil folds 30 min apart. Sat for 4 hours. Shape and put to rest in refrigerator over night. Baked at 9:30am.

I’ve been making rye loaves but they’ve been giving me trouble lately so I wanted to make sure it wasn’t my starter by going back to basics and making a regular loaf. It wasn’t the starter! These are the most perfect loaves I’ve ever made. Very impressed. What do you all think?
