Smoked haggis and eggs breakfast
After a number of Scottish holidays my favourite breakfast has become a simple haggis slice and poached eggs. Thought I’d treat myself and decided to smoke some haggis this morning. The haggis wasn’t particularly authentic (M&S/ McSween) but I sliced it and lit the dregs of a bag of lumpwood. I added a couple chunks of cherry and limited the air to a trickle so it wouldn’t burn out too quickly. Temps hovered around 140-160 degs C and I gave the slices just over an hour. Results? The outside dried a little but the inside stayed moist and lovely. Smoky but subtle, the spices and warm peppery haggis flavour suited the smoke really well. Maybe a bit long-winded for breakfast but delicious.
