Need advice or tips for memory issues while serving.

Hi, I’m kind of a lurker of the sub but I’m looking for advice.
For a little of background I worked as a barback for almost about a year and worked as a “server” (?) for about a week at a different place but left shortly (it’s a long story but I had been mistreated after just getting out the hospital by the manager and staff while also not getting trained at all and the experienced really effected me).

All that being said, I’m looking into getting a new job as a barback but I’m also possibly wanting to give serving another go.
Whats making me hesitate though is that around a year ago I had a pretty bad concussion and since then I’ve noticed my memory isn’t all there sometimes (part of what made my serving experience so bad).

But I during when I worked as a barback, and while I struggled definitely, I found it a slight bit easier because it was a lot of repetitive tasks that would eventually stick in my mind and I eventually became my bartender’s favorite barback.
One of my biggest problems that would trip me up all the time though is when taking orders (mostly when it was busy) details of the order didn’t stick in my brain at all, either from stress or just generally memory issues. I’m looking for advice or tips on how to work on being able to remember things and being able to work through the stress and blanking out when serving because I genuinely want to get better at this and work through it.
