Need help homebrewing an enemy

I'm not a new DM, have been doing that for a few years, but i'm very much new to DND, so I don't feel entirely confidente on my familiarity with the system to start homebrewing any time soon, but i need a very specific low-level enemy for an encounter.

Basically, the enemy is a sapient big salamander (the actual animal, not the fire guys) that lives in the forest and can hide in foliage close to the ground. Kind of a "attack, hide, attack, hide" situation.

It should be an easy encounter with a single enemy for a group of four lvl 3 characters, and idk how relevant this is but i'm expecting a non-violent (for the most part) resolution to it.

And just for clarification, when i say "big" i mean like 50-60 centimeters and the system is 5e.

Could any kind soul who's good at homebrewing make something like that real quick? or point me to any place where i might find something that could be adapted to that?

Any good places to find hyper specific songs for the sessions?

I'm not the best at looking stuff up and actually researching stuff, so I have a hard time finding background music for my more specific situations. For example, I have a session coming up with a scene of combat/chase with a wereowl, and I have no idea where I would find music for it that isn't bland action music from youtube or something. Can someone help me out? (Free resources prefered and no problem with copyright)
