How do I update my case/get reevaluated for snap benefits? (NC)

In February I applied for snap benefits and was granted 3 months of benefits, and told they'd end after May as I didn't meet the ABAWD work requirements. This was because I worked just under 20 hours a week at my job for the month of January as my workplace got snowed out. I've tried calling the number I was given for my caseworker twice since I started reaching the 20 hour a week requirement again with the paystubs to prove it, and haven't gotten any response. I've gotten mail from FNS telling me my benefits are ending and I'll need to request a hearing to appeal this decision. I'm really lost as to where I'm supposed to start here. I've tried setting up my ePASS account and trying to reach my caseworker or submit forms through there, but it won't let me verify my email, it just says they're not doing that right now come back later. I've tried filling out the application for the legal aid program FNS recommended in the letter, and I haven't heard anything back from them either. Is the only place to go from here just to request a hearing on my own and represent myself? What would that look like? Would it be better to just let my benefits end and reapply? In that case is there a certain amount of time I'd have to wait in order to reapply? Is there another place I could reach out to provide proof of my ABAWD working status that would be able to avoid any more issues entirely?

Sorry for the rambley mess of questions, any help is appreciated.
