Very first bake

Hi! Just completed my first bake tonight.

It is a 65% hydration recipe I followed. Purposefully more dense so I can develop my skills.

She may be a tad gummy. I only waited 1 hour to cut into her, just too excited. She smells and tastes amazing so no harm, no foul. Very proud.

My starter was given to me by my boyfriend’s sister. Established starter. Unsure of how old. In my care for about 1 week?

For baking starter/levain (am I using that word right?)

1:3:3 (25g starter, 75g flour, 75g water) I used 100g for recipe.

Total Dough Ingredients

•	325g water

•	100g active starter

•	500g flour total

•	10g salt

Flour Mix

•	488g unbleached flour

•	12g whole wheat flour

•	Whole wheat flour was added, ran out of unbleached flour. 

I followed the steps in the tik tok. Except I skipped a stretch and fold. I probably over-proofed. It wasn’t ready for cold proof, so I went to bed with it resting in oven. Many bumps in the road and wasn’t going to plan for 90% of the journey. But here she is.

I have research heavily in this sub before attempting so thank you all. I am open to any tips, be nice I’m sensitive.
