PB Banana Oat Bread Protein Cookies

I was experimenting and think I've nailed down a new recipe so I thought I'd share. Let me know if you've tried it and if there's anything you think could improve it. I think adding walnuts next time would be perfect but they're expensive right now.

I know a lot of people have reactions to oatmeal. You can probably substitute it for half flour and half chopped nuts.

Rough Nutritional information based on 18 cookies in a batch

Calories: 140

Total Carbs: 15g

Total Fat: 6g

Protein: 10g

Ingredients

Group A

  • 2 Mashed Bananas
  • 1/4 C Splenda Brown Sugar
  • 1 tsp Vanilla Extract
  • 1/2 C Creamy Peanut butter
  • 1 Large Egg

Group B

  • 1 C Old Fashion Rolled Oats (I used GF Bob's Redmill)
  • 2 Scoops or 58g of unflavored Isopure Zero Carb Whey Protein Powder
  • 1/2 tsp Baking Soda
  • 1 TBsp Psyllium Husk Powder
  • 1 tsp Cinnamon
  • Dash of salt

1/3 C mini Chocolate Chips

Instructions

  1. Beat Group A in a medium - large bowl until it's well combined.
  2. Mix Group B in a small-medium bowl until everything is well combined.
  3. Fold in the dry ingredients to the wet ingredients with a spatula until there's no clumps of whey showing.
  4. Stir in the chocolate chips until combined.
  5. Cover and place in freezer for 20-30 mins.
  6. Preheat oven to 350 and line and oil a tray with foil or parchment paper.
  7. Use a TBsp to drop batter onto tray spaced about 2 inches apart. The cookies spread out a bit.
  8. Bake 10-12 minutes until a light brown just starts to show on the bottom.
