
PB Banana Oat Bread Protein Cookies
I was experimenting and think I've nailed down a new recipe so I thought I'd share. Let me know if you've tried it and if there's anything you think could improve it. I think adding walnuts next time would be perfect but they're expensive right now.
I know a lot of people have reactions to oatmeal. You can probably substitute it for half flour and half chopped nuts.
Rough Nutritional information based on 18 cookies in a batch

Total Carbs: 15g
Total Fat: 6g
Protein: 10g
Ingredients
Group A
- 2 Mashed Bananas
- 1/4 C Splenda Brown Sugar
- 1 tsp Vanilla Extract
- 1/2 C Creamy Peanut butter
- 1 Large Egg
Group B
- 1 C Old Fashion Rolled Oats (I used GF Bob's Redmill)
- 2 Scoops or 58g of unflavored Isopure Zero Carb Whey Protein Powder
- 1/2 tsp Baking Soda
- 1 TBsp Psyllium Husk Powder
- 1 tsp Cinnamon
- Dash of salt
1/3 C mini Chocolate Chips
Instructions
- Beat Group A in a medium - large bowl until it's well combined.
- Mix Group B in a small-medium bowl until everything is well combined.
- Fold in the dry ingredients to the wet ingredients with a spatula until there's no clumps of whey showing.
- Stir in the chocolate chips until combined.
- Cover and place in freezer for 20-30 mins.
- Preheat oven to 350 and line and oil a tray with foil or parchment paper.
- Use a TBsp to drop batter onto tray spaced about 2 inches apart. The cookies spread out a bit.
- Bake 10-12 minutes until a light brown just starts to show on the bottom.
