Feeling Proud

Got this plot on June 12th, not too bad except for those nettle roots. Was able to grow these in that time. My parents, who were visiting the UK, helped me out..

What is this plant?

Is this plant edible? Its growing in my garden, have anyone cultivated this. Quick search tells me Amaranthus.
