Chicken Cannelloni recipe needing second opinion

I was hoping to get some feedback on whether an adjusted recipe for Chicken Cannelloni would work or be a complete disaster. I am a total novice and looking to expand what I do for the first time in years. Most of the meals I do I've been doing since before having kids. Now there's kids and they and my wife are all fussy eaters.

The adjustments are mainly because of requirements my wife has regarding having more veggies in our diets (not just meat) and she's not a fan when there's too much cheese. Budget is also a concern. I swapped the riccota out with something I can grab easily from the local supermarket.

Veggies

  • 6 cubes frozen spinach
  • 1 teaspoon garlic from jar
  • 1 carrot - fine grated
  • 1 small or 1/2 zuccini - fine grated + squeezed

  • oregano
  • basil
  • parmesan

As for directions. I was going to cook the tubes as per packet instructions. For the mixture put it all in a fry pan including Bechamel sauce to brown and evaporate a bit. Then put the mixture in the tubes. Grated cheese and one of the sauces (not sure which one) for on top.
