Places to live in FL ?

Hey Everyone,
We moved to FL 5 years ago when my husband took a job offer! It was always a dream of mine to love to FL we thought when we would retire but life changes and plans change so we made to move way earlier than we ever anticipated. We now live in Winter Haven. I am not a fan of Winter Haven or Polk County in general. I have down alot of driving and we have seen many areas. I am looking for help on cities/towns to research to move to. The only thing keeping me from leaving Winter Haven is the School my kids are attending. My kids are 7 and 9 and school they attend goes until 5th Grade. I want to take my time to do research and visit areas and make it the last place we move to and stay. Im looking for an area that has space between houses with a country type area. Not interested in congestion of tons of stores and traffic but want to be able to access stores without driving long distances. Do not want to be on the coast. Think back country roads. I am looking for more privacy and acreage for my property. Places that are not my speed are Kissimee, Orlando, Lakeland, Davenpprt, Winter Haven. I like to be near the amusement parks like Seaworld, Busch Gardens, Lowry Zoo and Universal however, I dont mind extending my drive time for these places for some peace. I have looked at Dade City, Brooksville and I do like the areas but still not sure if this is best place. I want a place that is safe or feel safe within the city I reside in which I understand crime is all over. Im just looking for a safer and more peaceful place to raise my children where they can play and be kids with somewhat decent schools which I have found is in this are hard to come by. Please can anyone give me some areas to start driving and looking into. I am also not interested at all in areas full of HOA's. Does such a place exist and if so please give me any details I would truly appreciate. I decided to post here instead of FB because I am sick of hearing we are full and the negative comments that are not helpful. Thank you for anyone willing to help me.
