Route suggestions Tuscany and Northern Italy

Hi, i will be celebrating my Mothers 60s Birthday at Lago Maggiore and two friends asked me if i wanted to join them on a trip to Florence. Now between these two events i have 4 days where i will be packing with my roadbike and camping in a bivybag from Florence to Lago Maggiore. In the pictues you will see a rough plan - which is totally adaptable - of day 1 day 2 and 3-4.

I am pretty happy with the routes on day 1-2. Im concerned that the long flat stretch on day 3-4 might be a little monotonous and boring. I was also thinking about going to the mediterranian coast and taking a whole different route, but for that i am concerned about boring beach esplanades. Does anyone have any suggestions for routes to take, places to visit and to avoid? I like the nature, mountains and i hate touristy places.
