My personal thoughts are — She’d probably be confused at first, then request his removal from her domain. Until she learns just how Reality shattering strong this guy is. And SIMP would probably be terrified beyond the core.
Another take is SIMP would try to manipulate him with her eloquence to persuade Shaggy to join the Rouges and ultimately use him as pawns for her plans against enemies. SIMP might order for the removal of all stars, unknowingly how catastrophic it’d be for the stability of our galaxy. While trying to figure out a way to harvest his powers (not possible) then get rid of him and become the ruler of the Multiverse or something.
A 3rd scenario is, SIMP (in a scared state) would declare war, putting the entire galaxy at risk. As she could see him as a threat to crush, with no doubt she'd use at least a million Rouges like.. "Zoinks, lady! I’ll just have to tap into using 0.003% of my power to stay afloat from the gravity." Not even a fair match. Looks like Sagittarius A* will be paying a visit earlier than expected.
As for Sun, he’d probably let him defend the Sol System from threats.
