How do I train an Oak to be wide and scraggly? And which species should I get?

I fell in love with California Live Oaks, but unfortunately, I’m in Southern Maryland. But I’m selfish and I want that same gnarled look with low climbable branches in a species that’s also beneficial to the ecosystem here. All the Maryland oak species I google seem too tame and dignified. So can I train it to be gnarly? Am I asking too much?

And yes, I’m aware this project will very very much so outlive me and I’ll probably never get to climb the branches.
