How do you get a more open crumb
As title suggests I’m after a more open crumb and better honeycomb structure. Does anyone have any tips?
Is it mostly to do with proofing ?

Hello everyone, I baked the croissants this morning but I’m not really happy with them. They look a bit flat. I let them proof until they were jiggly for 3.5 hours between 26 and28 degrees. Any advice would be greatly appreciated.

Pretty happy with how these turned out!
they ended up being a little to long for my liking. Any tips on how to make them look more aesthetically pleasing?
