
Cast iron veggies, cheesy grits, and eggs
Just wasn’t in the mood for my usual fried eggs this morning so I decided to make a little Sunday brunch.
Over medium heat, sauté onions, peppers, and baby spinach in oil of your choice (I used olive oil).
While veggies are sautéing, make a batch of cheesy grits (4 parts water/milk to 1 part grits, butter and cheese added at the end). Season with salt and pepper to taste
Spread sautéed veggies in an even layer across bottom of pan. Pour cheesy grits atop the veggies.
Make small wells in grits, then crack an egg into each well. I seasoned with MSG, chili crisp, then topped with more cheese before putting under broiler on high to cook the eggs.
Broil 3-5 minutes, keeping an eye on the eggs and pull pan out at your desired egg doneness.
Top with salsa, hummus, sour cream, Greek yogurt, hot sauce, pickled veggies, or whatever you have at home. I used salsa and Greek yogurt since that’s what I had.
