Any advice for someone with low experience, a few interests, looking for career paths recommendations?

I’m in my early 20s, currently a server (USA). I’m quite good at it but, man I do not want to be in hospitality forever. I didn’t want to go to school at first, because I don’t want to pay for a degree l’ll regret. Preferably, I’d like to do the least schooling possible. I’ve consider something in tech often (I don’t want to do anything that promotes the growth of AI). Could be interested in jobs helping the environment or maybe even politics. I really just don’t know what to look into as there’s SO many options and I have a few different paths I think I’d enjoy. Software Engineer? The next governor? What do I do with my life that I hopefully won’t find myself incredibly disappointing.

I’d just like some suggestions. If there’s anything else about myself I should add, please let me know.
