I’m fairly new to Japanese knives and I want to get a knife with something close to this description. I’m looking for a kiritsuke gyuto with a green wood handle and a walnut muzzle.
I’ll be in Tokyo, Osaka and Kyoto for a total of 10 days and am looking to either custom build a knife or buy one and get it engraved. I’m not sure if it’s possible to pick out the steel/blade, handle and get it engraved in one visit but I’m willing to make my order and come back in a week.
