Discussion on r/AustralianNostalgia about the demise of Milk Bars made me think of the demise of sandwich places in food courts. There used to always be a place where you could get a sandwich made from the array of fresh fillings, and they would often have that crepe machine that makes a long crepe, filled and folded into a square.
The closest we have is Subway, but that doesn't hit the same spot. Can't get actual sandwiches made on bread, too processed, too "American", and reliant on greasy salad dressings to have any sort of moisture.
Everything is now fast food, and whatever the latest insta-friendly fad is.
I read a while ago that the big shopping centres have shut down anything which is just a unique store with one location, and everything HAS to be a national franchise. And there's no chain of sandwich stores.
