So, I wanted to create those nice looking plates where they flambe the food (usually a steak) while it is on the plate, I used Rum but it didn't catch on fire, when I tried on a very small amount of steak it did catch on fire but very hardly and the flame lasted for just a few seconds, on a regular sized steak it created a tiny little fire that lasted for 2 seconds.

What did it not work? I think that it was because the rum wasn't strong enough but it was 37% alcohol and they say to use something that is 40% so I thought that the 3% difference wouldn't matter that much. Should I use something stronger? Is it okay to use vodka? The added flavor of the rum would be nice but it is mostly for how nice the plate looks with fire on it so even if the vodka doesn't add any flavor to it, it's okay as long as it works.
