Back at it again with another NKD. Been a little MIA lately, life’s been doing its thing.
Now this one… is something special. Got myself another Morihiro wide bevel. Yes, you read that right, this blade was fully sharpened by Morihiro-san himself. Not just touched up, but properly finished by the man, confirmed by both Morihiro-san and Nakagawa-san. This came out of Nakagawa-san’s recent popup at Isetan in Tokyo, and only a limited number were made.
The wide bevel on this is very subtle, you have to catch it at the right angle to see it properly. Very typical of Morihiro-san’s later work. Nakagawa-san’s Damascus finish is absolutely gorgeous, it almost looks alive in person. Under different lighting it almost shifts, which makes it one of those blades you keep looking back at.
The handle immediately reminded me of Baba Hamono urushi gold sparkle pieces. At first I thought it might’ve been from Momose Juntetsu-san, but it turns out this one was made by Fukuzawa-san. It has a different texture to it compared to Juntetsu-san, has a more wood like texture. It’s beautifully well made but I honestly would prefer a classic ebony with horn ferrule on it, just to give it some extra weight as well.
Performance wise, I’ve only done a couple of meal preps with it so far and I’m still figuring it out. It cuts beautifully, no question there, but I’m a bit on the fence about the stickiness. The more mirror-like finish definitely plays a role here. I might need to give it a bit more time.
