First “grown-up” bike at 35 – gravel bike for rural Denmark? Budget €1k–€3k, looking for used bike advice

Hi everyone,
I’m looking to buy my first “grown-up” bike and could really use some advice.
I’m 35 years old and live in rural Denmark, where cycling infrastructure is excellent and bike paths are everywhere. My goal is to use the bike for family rides and casual weekend adventures, but I also expect that I’ll want to push myself and do 50 km+ rides, maybe even longer as I get more into cycling.
I don’t want (and honestly can’t justify) buying a brand-new bike. I find myself much more attracted to older, classic-looking bikes, and I’ve recently discovered Buycycle, which seems like a good place to buy used bikes.
I’ve been trying to figure out what type of bike I actually need, and from what I’ve read, a gravel bike sounds like the best fit. However, I’m completely new to this world and I’m not sure if that’s really the right choice.
My budget is around €1,000, although I could stretch it to €3,000 if there is a truly outstanding bike that would be worth keeping for many years.
My biggest concerns are:
How do I avoid getting scammed when buying a used bike?
What should I check before purchasing?
Are there specific brands or models that offer particularly good value on the used market?
Is a gravel bike really the right option for mixed riding, bike paths, longer rides, and occasional light gravel?
What size should I be looking for? (I’m 186 cm / 6’1”)
Any tips, recommendations, or things you wish you knew before buying your first serious bike would be greatly appreciated.
